Born and raised in France, Jean always wanted to be a chef.

His training provided a solid background in classic techniques and he now takes a pride in combining those skills with a love of “the best of British”.

Jean has built up valued relationships with local producers. He favours meat, fish, fruit and vegetables from the best independent butchers and growers.  His menu changes to take account of the best daily and seasonal ingredients at the market (locals even buy their fish from him!)

The Peacock is right on the border of Shropshire, Worcestershire and Herefordshire, so Jean is spoilt for choice when it comes to the finest local produce.  His philosophy is simple: choose the best seasonal produce and let their quality do the talking.
